Step-by-Step Instructions
Thoroughly Dry the Skin (Crucial!)
Remove salmon from the refrigerator 15 minutes prior to cooking. Use paper towels to pat both sides completely bone-dry, paying special attention to the skin. Moisture creates steam and prevents crispiness. Season the skin generously with flaky salt.
The Hot Pan-Sear
