There is no comfort food more soul-soothing than a steaming, velvet-smooth bowl of Rustic Roasted Heirloom Tomato & Basil Bisque. Slow-roasting ripe garden heirloom tomatoes with sweet yellow onions and whole heads of garlic concentrates their natural sugars into an intense, rich umami flavor that canned tomatoes could never replicate.
The magic of this bisque comes down to the sheet-pan caramelization: allowing the tomato edges to blister under high heat until charred and smoky, before pureeing them with handfuls of fresh Genovese basil leaves and a luxurious swirl of cream. Served alongside a crusty grilled sourdough toast, this is home-cooked luxury at its finest.

Roasted Garden Vegetables:
- 3 lbs fresh ripe heirloom tomatoes (halved)
- 1 whole head garlic, top sliced off
- 1 large sweet yellow or vidalia onion, quartered
- 3 tbsp olive oil + oregano, sea salt & black pepper
Bisque Simmer & Garnish:
- 2 cups vegetable stock or chicken bone broth
- 1 cup fresh sweet Genovese basil leaves
- 1/2 cup heavy cream or coconut cream
- 1 tbsp balsamic glaze + crusty sourdough for dipping
Step-by-Step Instructions
- Roast the Aromatics: Preheat oven to 400°F (200°C). Arrange halved heirloom tomatoes cut-side up on a baking sheet with yellow onion quarters. Drizzle garlic head with olive oil and wrap lightly in parchment. Season generously with olive oil, sea salt, black pepper, and oregano. Roast for 35 minutes until tomato edges are lightly charred.
- Capture the Roasted Juices: Remove tray from oven. Let cool for 5 minutes. Squeeze the soft, caramelized sweet garlic cloves directly out of their skins onto the tray with all natural juices.
- Blend with Fresh Basil: Transfer roasted tomatoes, onions, garlic, and pan juices into a dutch oven. Pour in broth and add fresh basil. Use an immersion blender to puree for 2–3 minutes until velvety smooth.
- Velvet Finish: Place pot over low heat, stir in cream and balsamic glaze, and simmer gently for 5 minutes (do not boil). Season to taste with extra sea salt or cracked pepper.
- Garnish & Serve: Ladle into warm shallow soup bowls. Swirl with extra cream, top with fresh basil, olive oil drizzle, and serve with warm grilled sourdough!
👨🍳 Chef’s Flavor Secret:
Never skip the balsamic glaze! The natural acidity of tomatoes needs a touch of aged balsamic sweetness to balance the sharpness and bring out a rich gourmet restaurant flavor.
